Petite® Sorrel Green Apple™ is known for its dark green coloring, featuring a slight sheen on the top of the leaves and an iridescent underside. The leaflets have a thick, crisp, and succulent consistency with a juicy crunch. The stems are also crisp and delicate with a lighter green hue. Current Facts
Petite® Sorrel Green Apple™, botanically a part of the Oxalis genus, is a specialty green exclusively grown by Fresh Origins® in San Diego, California. Petite® Greens are a curated category of plants that are harvested after their microgreen stage but before they have reached maturity. The leaves are typically full and expanded, resembling mature types, but they retain a tender, crisp, and succulent consistency with robust taste. Petite® Sorrel Green Apple™ is known for its ability to bring balance to flavor, color, and texture in culinary dishes. The refreshing, sharp greens are sturdy, adding visual impact with their trifoliate appearance, and can be placed whole on dishes to elevate and refine the overall presentation. Petite® Sorrel Green Apple™ is also versatile, used by mixologists to enhance drinks. Petite® Greens cultivated by Fresh Origins® are produced through traditional farming methods that utilize natural sunlight, a proprietary soil combination, and water. Chefs and mixologists value Petite® Sorrel Green Apple™ for its multi-purpose nature, unusual flavor, and ease of use.
Nutritional Value
Petite® Sorrel Green Apple™ has not been extensively studied for its nutritional properties, as the greens are consumed in limited quantities. Sorrel, in general, is a source of vitamins B, C, E, and K to strengthen the immune system, guard the cells against free radical damage, aid in faster wound healing, and contribute to energy production. Sorrel also provides minerals in varying amounts, including calcium, copper, iron, magnesium, manganese, phosphorus, potassium, and zinc. These minerals help the body support bone and tooth health, produce the protein hemoglobin for oxygen transport through the bloodstream, control daily nerve functions, balance fluid levels, and build red blood cells. The sharp, sour taste in the greens is due to the presence of oxalic acid, a naturally occurring organic compound, which is recommended to be consumed in moderation.
Applications
Petite® Sorrel Green Apple™ has a refreshingly tart, earthy, green apple flavor suited for fresh and cooked preparations. The Petite® Greens are known for their versatility, complementing flavors in sweet and savory dishes, and are sturdy, allowing them to hold up well in heated recipes without wilting. Petite® Sorrel Green Apple™ can be added whole to salads, especially when dressed with vinaigrettes, or blended into dips and sauces, including variations of pesto. The tender, crisp, and succulent greens can be layered into sandwiches, chopped and folded into compound butter, or topped as an edible garnish over appetizers like crudo, fresh cheeses, or melon dishes. Petite® Sorrel Green Apple™ is well-known for its pairing with seafood. The bright flavor elevates fish dishes featuring tuna, salmon, halibut, and sea bass, and the greens are also used over scallops, shrimp, and other shellfish dishes. Petite® Sorrel Green Apple™ also helps balance rich and fatty elements in meat dishes using pork. Try incorporating Petite® Sorrel Green Apple™ in caramelized onion and roasted squash tarts, using the greens to garnish soups and stews, or sprinkling over casseroles. The greens are also used in sweet preparations, added to pies, galettes, tartlets, and clafoutis, or used to flavor sorbets and granitas. Beyond culinary dishes, Petite® Sorrel Green Apple™ is used to heighten flavors in cocktails, tea, and specialty drinks like lemonades and shrubs. Petite® Sorrel Green Apple™ pairs well with fruits like raspberry, strawberry, blackberry, cherry, and pear, pecans, chocolate, goat cheese, and spices like cloves, cinnamon, and ginger. Petite® Greens should be kept in their original clamshell and stored in the refrigerator for 7 to 14 days.
Ethnic/Cultural Info
Petite® Sorrel Green Apple™ is an innovative type of wood sorrel, favored for its bright and tangy taste. It is estimated that there are over 500 species within the Oxalis genus, with some scientists claiming that there may be up to 850 species. Many of these species are collectively known as wood sorrel due to their distinct trifoliate shape, sour flavor, and crisp consistency. In the British Isles, wood sorrel is sometimes called cuckoo’s bread or cuckoo’s meat, referencing the cuckoo bird, which is one of the most recognizable species of the region. Cuckoo birds notably migrate from the United Kingdom to areas of Africa for the winter each year and are well-known for their two-note song. The birds return to the British Isles in the spring and are a symbol of the changing seasons, being the harbinger of spring. When the birds return and share their recognizable call, residents are reminded that spring is coming and there is hope for a new season. In local myths and legends, the birds acquired their famous call after eating wood sorrel. The bright, tangy greens were believed to help clear the bird’s voice, and wood sorrel traditionally appears around the arrival of the cuckoo, visually marking the arrival of spring.
