Referenced Newtonsoft.Json explicitly in the unit tests
`Microsoft.Azure.Cosmos` needs `Newtonsoft.Json` at run time but leaves the reference to the consuming project, and its build check fails without one. The unit tests got it only through `Microsoft.TestPlatform.TestHost` 17.x, which no longer depends on it from 18.10 on. Co-Authored-By: Claude Opus 5.5 <noreply@anthropic.com>
