Preparation

Mix the water, milk and oil in a jug. Add the liquid, flour, salt, sugar and yeast (not the soda, 60ml water or egg white) to the bread pan of your machine in the order that your bread machine instructions say. Set the machine to the dough setting and press start. After the cycle has ended, carefully remove the pan from the machine and pour the batter into a large warmed mixing bowl. Dissolve the soda in the remaing 60ml warm water and stir it into the batter, whisk the egg white until it forms soft peaks and carefully fold it into the batter. Cover the batter mixture with lightly oiled plastic film and allow to rise for 30 mins. If serving immediately then light the oven to its lowest setting and a clean dry tea-towel ready otherwise have a clean wire cooling rack ready. Lightly oil a griddle pan/plate (no need to oil if non-stick) and gently heat, when it is hot pour tablespoons of the batter onto the hot surface, spacing them well apart to allow for spreading, cook until the tops no longer look wet and have taken on lots of tiny holes. When the base of each Pikelet is golden brown flip it over with a palette knife and cook the tops until light golden brown. Remove them from the griddle and either layer in the folded tea-towel and put into the oven to keep warm or lay onto the wire rack to go cold. Repeat until all the batter is used up. Serve freshly cooked with Butter and Preserves or for a tasty change try Crisply Fried Bacon Rashers and Cream Cheese. If making them for later on then allow to go fully cold then pack into a suitable container/bag. To reheat the Pikelets, just pop them in the toaster or under the grill and toast as you would with commercial Pikelets/Crumpets. These are also suitable for freezing, just toast from frozen.
