As seen in the above example, calling today.ToDateTime(CultureInfo.InvariantCulture) results in:

Specified cast is not valid.

This may be by-design as the implementation itself merely throws InvalidCastException.

However, calling today.As<DateTime>() results in:

cannot convert object to target type
