How to get activity statistics by activity type when its started from the tracker?

I'd like to track all the statistics for a given activity ie. get the distance and elevation for all hiking activities. Ideally this data would be appended to a CSV file for tracking all my hikes for the year.

Whats the easiest way to do this? I can't figure out how to get the statistics by activity name or activity id.
